- The compositional characteristics (total soluble solids, pH, titratable acidity, moisture, pectin, reducing sugars, nonreducing sugars and total sugars) of four raspberry cultivars ('Boyne', 'Festival', 'Killarney' and 'Prestige') grown in Maine were evaluated during three consecutive years. Significant differences were found among these cultivars. In different growing seasons there were also significant effects on these characteristics in the same cultivar.
