Anthocyanins in fruits of Prunus padus (bird cherry)

Abstract:
Bird cherry (Prunus padus) anthocyanins were extracted with acidified methanol, fractionated by column chromatography on Toyopearl HW40(S) and purified in a C-18 Sep-Pak cartridge. The pigment composition was very simple, as there were only two compounds. The anthocyanins cyanidin-3-rutinoside (60%) and cyanidin-3-glucoside (40%) were determined using chromatographic and spectroscopic methods.
